Steps

Pierce holes in the skin of the chicken thighs with a fork.

Cut the thighs in half, then rub them with the seasoning ingredients (marked with ★). Allow the chicken to sit for 15 minutes.

Coat the chicken with katakuriko, then fry in a generous amount of oil.
- 4
Once the chicken is cooked through, get rid of any excess oil. Add the seasoning ingredients marked with ◎ and allow the flavours to meld with the chicken.

Cut the chicken into bite-sized pieces, and top with mayonnaise and chopped leek. It's finished!
