Heat oil in a pan, saute onion, and garlic.

Add all the vegetables one by one, add salt and water. Cover with lid and let it cook for 5 to 7 minutes or until all the vegetables get cooked by 80 %.Add leftover curry,curry powder,chili and red chilli powder and let it cook until all the vegetables get cooked properly.

Add lemon juice and chopped coriander, mix well. Make layered roti or paratha, either make small pieces or shred it and add them into the prepared vegetable curry. Mix well.

Serve hot.
