Ivy gourd/kundru is a tropical vegetable, grown in vine. They are popular in India , Thailand, Indonesia. This is a summer vegetable. The curry I have made is a dry one.

Wash and chop kundru.

Heat oil on a pan. Add mustard seeds and allow to splutter. Add hing and dry chili too. Saute.

Then mix both the dals and curry leaves. When dals are brown add onion and fry till golden.

Mix chopped kundru, turmeric and salt. Cover and cook.

Add dry ginger powder, amchur powder, coconut powder and ground peanuts. Mix well to ensure coating of masala. Cook on low flame for 2 minutes more and Ivy gourd masala fry is ready to serve with rice/roti
