The man needs a curry and what can I say...I caved in! But this one will help keep his cholesterol nice and low. As for the naan bread...just a cheeky treat. I mean, rice cakes or sunflower bread (or normal go-to these days) just makes me cry when served with curry. So a bit of splurge, but keeping complex carbs high and saturated fats as low as possible.

Ingredients

4 people
  1. 400 mlchicken stock
  2. 100 gred lentils
  3. cumin
  4. 2medium red onions
  5. 1egg plant
  6. 4 tbsplow fat greek yoghurt
  7. 2 tbsptikka curry paste
  8. For the Naan bread
  9. 300 glow fat greek yoghurt
  10. 5 gbaking soda
  11. 1egg
  12. 400 gwholemeal or plain flour
  13. 2 1/2 tbspolive oil
  14. parsley/rosemary/oregano

Steps

    Combine yoghurt and bicarbonate of soda. Let rest for 15min. Then add the egg, flour and oil. Combine all together and knead the dough. Let the dough rest under a cloth for 15min

    Divide the dough into 5 and form them into equally shaped balls. All 15min rest time under a kitchen towel.

    Roll them into round(ish) discs. Heat them in an oiled pan for 3 min on each side (they should puff up nicely and gain a very light brown colour on the surface.

    For the curry: finely chop and sauté in oil the onions and garlic. Cool until soft. Add the curry paste and cumin. Cook for a further 5 min and then add the aubergine. Occasionally stir for 5min. Option to add cherry tomatoes.

    Add the chicken and cook for 3min. Add the vegetable stock and lentils. Bring to boil. Simmer for 25min (lid on) until thickened. Stir occasionally. Season with salt and pepper and add the yoghurt. Serve.

Well, I guess I should start by introducing us-I'm Penny and my sous chef is my husband James (aka Jamo). We are your average(ish) married couple living and working in London; he's in finance, I am, not (unless investing in shoes counts...). Anyway! Yes, average couple. Apart from the fact that one of us has had a heart event and the other one of us nearly had one after hearing the news..and neither of us is 40 (yet!).Let's all just digest that for a moment...And so, after being told he needs to reduce carbs and fat in his diet I refused to let anything but exciting and enticing food appear on our table. We have fully embraced the low carb/low fat diet (...with the cheeky fillet or burger every couple of months because...well, he's South African and we're both only human!)Our families have been amazing during the adjustment period and are always keens to hear what interesting recipes we've engineered.Alot of the recipes are a mish-mash combination of recipes from my mum and anything I can find online or in cookbooks. I try and tailor it to our flavours (warning: they can be quite spicy!Why share the recipes? Easy: I found amazing cooks shared stuff online day 1 'after the event' when I thought we'd be living on chicken soup for the rest of our lives!Our turn to share back incase anyone struggling and needs some inspiration.I should probably add, that he's fully recovered and is back playing golf and running.
