Italian at Home Rice Croquettes

I ate this at an Italian restaurant that I went to many years ago.
I've been craving them ever since I saw them in one of my dreams, so I started with making the tomato sauce.
You only need a small amount of oil.
Please roll them around the pan and deep-fry.
If you prefer a stronger flavor, please add 2 tablespoons of ketchup into the tomato sauce. Recipe by Marsan

Stir-fry the garlic and onion with olive oil. When they are cooked, add the canned tomato and season with salt and pepper. Simmer to reduce the tomato sauce.

When most of the water has evaporated, pour half of the sauce over the microwaved rice and mix.

Divide the rice from Step 2 into sixths. Press in the diced mozzarella cheese into the center. Form into round rice balls.

Dredge the rice balls with flour, beaten eggs, and panko. Roll them around in the pan and deep-fry.

When the croquettes are golden brown, take them out. Transfer onto a serving dish. Serve with warmed sauce from Step 1 to finish.
