Grease and line 22*30cm baking tin

Roughly chop 225g chocolate and set aside

Melt remaining chocolate with butter and leave to cool slightly

Mix eggs, coffee and sugar together in a large bowl and gradually beat in melted chocolate. Fold in flour, salt, vanilla essence and chopped chocolate and pour into tin

Bake at 190 degrees C for 45 minutes or until just firm to touch in the centre. Leave to cool in tin and cut when completely cooled.
