Focaccia is a baked flat bread from the Italian cuisine. It is almost similar to pizza bread. It's also known as pizza bianca. It can also be served as a sandwich or side bread.

For the first proofing in a big bowl add warm water and sugar mix it then add active dry yeast and mix well then cover it for 10 minutes and allow it to activate. Then add the 1/2 cup flour mix very well cover it again and keep aside for 30 minutes or until the dough become bubbly. Check out the ingredients for 1st proofing in the ingredients section and use.

Meanwhile the first proofing is going on let's start preparing for the second proofing the final dough. In a 1 3/4 cup warm water add 5 tbsp olive oil and mix well and keep it aside. Then sieve the 5 cup all-purpose flour along with salt and keep aside. After 30 minutes of when the bubbles start to apper completely in first proofing add the salt and flour mix to it and mix well. Then slowly and gradually add the olive oil and water mix to the dough. Mix those all very well.

Once combined well transfer it to the working surface and start kneading it back and forth stretching it to the front then again to the back. This is called stretch and fold method. knead it for a good 10-12 minutes or until the dough become soft and smooth. At first it will be very sticky but as you will knead it will become smooth. Apply some oil on hands if it's too much sticky then knead. When the dough become soft and smooth then keep it in the same bowl applying some oil and covering it.

Cover it with a cling film then with a kitchen towel and allow it for 2nd proofing. It will take 40 minutes to 1 hour or more depending on the weather condition. Once the dough doubles in size then scrape it from all sides and punch it down. Then knead it for 2-3 more minutes and make a ball of it and transfer it to a greased baking tray. Then flatten it evenly from all sides then prick your fingers all over the dough deep inside. Once done start decorating it.

Feel it like a canvas and decorate it the way you want with whatever you like. I had used simple things mentioned above in the ingredients section. You can use red raddish, scallions, colourful bell peppers, mushrooms or whatever you like. Once done with the decoration prick it again with the fingers and add salt and olive oil on it then cover it and proof it for the 3rd time and this time only for 15 minutes. Meanwhile preheat the oven at 200°c for 15 minutes.Then bake it on 200°c for 35-40mins

Once done take it out from the oven and cover it with cling film for 10 minutes then gently brush it with olive oil and then transfer it to a cooling rack and allow it to completely cool down. Later cut into desired pieces.
