Mandarin Orange Yeast

cookpad.japan
cookpad.japan @cookpad_jp

I wanted to make natural yeast from fruit in season, and so I decided to use the mandarin oranges I had on hand. I love the aroma of citrus, so it was fun to make mandarin orange yeast liquid.

Although this may take a while to make in the winter, (when mandarin oranges are in season), it should not mold easily. If you use organic oranges, you can add the peel, too. If the fruit is sweet, you don't need to add honey, but you should add it if using mandarin oranges. Recipe by Surou

Steps

  1. 1

Prepare a sterilized glass jar with an airtight lid. Peel the oranges, and separate into single sections. Put all of the ingredients (2 oranges, 2 tablespoons honey, and water) into the jar. The next step is to shake the jar once a day, or stir it with a stir stick, open the lid and smell it.

  2. 2

Day 1: This is what it should look like after all the ingredients are combined.

  3. 3

Day 3: The mixture should be cloudy and start to form tiny bubbles.

  4. 4

Day 6: It should be bubbly. Just one more day!

  5. 5

Day 7: The oranges should be floating, and the mixture should be fizzy.

    Fizz!

  7. 7

Strain out the oranges through a tea strainer. If you don't plan to use the liquid yeast right away, you can store the mixture in the refrigerator without straining out the oranges.

  8. 8

Store in jar. I store it in the crisper drawer of my refrigerator. It should be used up within a month.

  9. 9

If you leave 1 spoonful of the liquid yeast and add it to a new jar of mixture, it should fizz up within 24 hours. Just add 1 mandarin orange, 2 tablespoons honey, water and 1 tablespoon of the liquid yeast.

Belinda Baumgarter, after you have your yeast water done you add an equal amount of flour. Example ( 1 cup of yeast water to 1 cup of flour.)
