Hi, I'm sharing a French toast recipe I make regularly. It goes great with a green salad—I hope you enjoy it!

Steps

Preheat your oven to 350°F (180°C). In a large bowl, beat the eggs with 6 tablespoons of Greek yogurt or fromage blanc. Season with salt and pepper.

Dip both sides of the sandwich bread slices in the egg mixture. Place them on a plate.

Heat 2 tablespoons of olive oil in a skillet over medium heat. Brown the bread slices for about 3 minutes on each side.

Meanwhile, cut the chicken into 1-inch (about 3 cm) cubes. Season with Herbes de Provence, salt, pepper, and any other spices you like.

Place the chicken pieces on top of the bread. Bake for 10 minutes.

Chop the sun-dried tomatoes into small pieces and sprinkle them over the toasts. Slice the olives and add them on top. Add small dollops of cream cheese.

Serve and enjoy.
