Okra (Bhindi) Sabzi

Cut the bhindi tops and tails and slice them into 1 or 2 inch pieces. Chopped Onion and Tomato.

In a heavy-bottomed pan on medium heat add 2 tbsp of oil.
Add in the chopped onions, ginger-garlic paste and sauté. - 3
Then add Bhindi and salt to taste.
Keep the lid on the pan slightly open. Stir it and cook for 8 -10 min till bhindi is tender - 4
Then add Tomatoes. Keep the lid of pan open slightly and cook. Open lid evaporates the excess moisture realise by tomatoes.

When tomatoes turned soft; add in the turmeric powder, red chilli powder, coriander powder, amchur powder, garam masala and if needed more salt to taste.

Mix well all the ingredients and sauté for another 5 min with its lid open.
Switch off the gas and transfer the Okra-Tomato Sabzi to a serving dish.
