Ingredients

  1. 2 tbspEVOO
  2. 1 cupchopped organic onion
  3. 1 cupfrozen organic mixed vegetables
  4. 1/4 cupchopped organic celery
  5. 3garlic cloves, minced
  6. 1/2 tsporganic rosemary
  7. 1bay leaf
  8. 3 cupsorganic vegetable broth
  9. 2 cupswater
  10. 1 cupschopped organic zucchini
  11. 1 canorganic cannellini beans, drained and rinsed
  12. 1 canorganic crushed tomatoes,
  13. 1 can (6 oz)organic tomato paste
  14. 1/2 cupshredded parmesan cheese
  15. 2 tsporganic red wine vinegar
  16. 1 cuporganic cooked macaroni or orzo
  17. 1 tsppaprika
  18. Salt and Pepper
  19. Pinchparsley

Cooking Instructions

    Heat the oil in a large Pot or Dutch oven over medium-high heat; add onion, garlic, mixed vegetables, celery, bay leaf, and rosemary. Cook, stirring occasionally for 8 to 10 minutes.

    Stir in the broth, water, cannellini beans, tomatoes, zucchini, parmesan, tomato paste and red vinegar. Bring to a boil over medium-high heat; reduce the heat to medium-low and simmer until the zucchini is just tender. Stir in cooked macaroni. Season with paprika, salt, and pepper. Add a pinch of parsley on top
