Heat the oil in a large Pot or Dutch oven over medium-high heat; add onion, garlic, mixed vegetables, celery, bay leaf, and rosemary. Cook, stirring occasionally for 8 to 10 minutes.

Stir in the broth, water, cannellini beans, tomatoes, zucchini, parmesan, tomato paste and red vinegar. Bring to a boil over medium-high heat; reduce the heat to medium-low and simmer until the zucchini is just tender. Stir in cooked macaroni. Season with paprika, salt, and pepper. Add a pinch of parsley on top
