Let's give a twist to the boring khichdi....
Steps
- 1
Wash the rice & lentils well and soak it in water for about half an hour.
- 2
Now wash and blanch the palak for about a minute or two. Then drain the excess water, let it cool down then and grind it into a fine paste.
- 3
Now heat a pan, add a tbsp of gheein it, add mustard seeds and cumin seeds. Let them splutter then add a bay leaf, dried red chilli, curry leaves & a bay leaf. Let them saute for a while
- 4
Then add chopped onion. Saute it for about a minute. Then add ginger-garlic paste. Fry it for about 2 mins. Then add chopped tomatoes. Add some salt, turmeric and a tsp of sugar. Fry the masalas well until oil starts releasing from the masalas.
- 5
Now add the palak puree to it. Mix everything well and cook it on a low flame for about 7 to 10 mins. Now keep this mixture aside.
- 6
Now in a pressure cooker add the soaked rice & dal. Add the desired amount of water, I have added 2 cups of water. Then add the palak mixture into it. Give everything a good mix. Now adjust the salt. Cover the cooker. Wait for the 3 whistles then lower down the flame and let it cook for 7 more mins. Then switch off the flame
- 7
Let the pressure of the cooker gets released by its own then open the lid, drizzle a tsp of ghee over it and serve hot with some pickle and fries of your choice..
