Blanch spinach in boiling water for 2 to 3 min. Take it out and directly put it in the ice cold water so it retains green colour. Then make a puree. Don't add water.
In maida add salt and oil. Make a soft dough by adding spinach puree in to maida. If required then only add water. Rest for 15 to 30 minutes. - 2
Coarsely chop the cabbage, Capsicum, carrots in chopper.
In a pan heat oil. Add garlic and ginger. Saute for a minute. Add chopped vegetables and add salt, soya sauce, chilli sauce and vinegar. Saute on high flame for 2 to 3 minutes. Don't overcook. - 3
Now make a small puri. Add stuffing and give shape of momos. Steam the momos for 10 to 15 min. Then brush the oil on momos and steam for more 5 min. Served with chilli chutney.

In a pan take chillies, onion and water. Cover the pan and boil for 5 to 10 min or till water get reduced. Cool the mixture at room temperature. Coarsely grind it.
In a pan heat the oil. Saute ginger garlic paste for 2 minutes. Add chilli paste and saute till it releases oil. Now add vinegar, soy sauce and salt. When it releases oil add ketchup. Mix it properly. Cool and store it in the fridge. Served with momos.
