Super Easy and Budget-Friendly Chicken Stew

Today I’m sharing a recipe for anyone who wants to learn how to cook something delicious and warm for the upcoming cold days. It’s very easy to make, and maybe you’ve just moved in with a partner or on your own and are starting to cook your first one-pot meals. That’s why I’m joining in to help those going through this exciting stage! I remember my own experience when I got married at just 21—how happy I was every time a meal turned out great! If Cookpad had existed back then, everything would have been so much easier! Now that you have this wonderful opportunity, I’m sharing how I make stews at home with just a few ingredients, and honestly, it’s really quick—you’ll be eating in about 30 minutes. It’s always a hit at home—everyone devours it!

Steps
- 1
First, add the oil to a pot. When it’s hot, add the chopped onion and bell pepper. Let them cook until they start to brown, then add the chicken breast cut into large pieces. Add the potatoes, cut into not-too-large pieces so they cook faster. Mix well, and after the chicken has browned a bit, add some tomato sauce, then the sweet potato, salt, and seasonings to taste.
- 2
Once everything is in the pot, reduce the heat to medium—not too low, not too high! Stir every 10 minutes or so. Add a small glass of water, cover, and let it cook until the potatoes are tender. Taste and add more salt if needed. If it gets too dry, add more tomato sauce or water. I love it with extra sauce because I always serve it with rice and like to pour the sauce on top.
- 3
Don’t forget to stir often and keep an eye on the sweet potato. If you cut it smaller than the potatoes, it might fall apart—sweet potato cooks faster, so cut it into larger pieces or add it a few minutes after the other ingredients start cooking. This recipe serves 3 or 4 people and turns out delicious! If you make it, I’d love to see a photo of how it turned out, and if it’s your first stew, let me know!
