Ingredients

  1. 1 poundboneless, skinless chicken breasts, cut into 1-inch chunks
  2. 2 Tbsphomemade taco seasoning
  3. 1 cuplow sodium chicken broth
  4. 1 (15 ounce)can corn kernels, drained
  5. 1 (15 ounce)can black beans, drained and rinsed
  6. 1 cupsalsa, homemade or store-bought
  7. 1 (4.5 ounce)can chopped green chiles OR chopped jalapenó, depending on your heat preference
  8. 1 cuplong-grain rice (I've used basmati and it works great)
  9. 1 cupshredded Mexican blend cheese (My family likes a blend of quesadilla cheese and cojito cheese)
  10. 2 tablespoonschopped fresh cilantro leaves

Cooking Instructions

    Add chicken, taco seasoning and chicken broth to a 6-qt Instant Pot® and gently toss to combine.

    Stir in corn, black beans, salsa and green chiles. Without stirring, add rice.

  3. 3

    Select manual setting; adjust pressure to high, and set time for 10 minutes. When finished cooking, QR. Stir in cheese until melted, about 1 minute.

    Serve immediately, garnished with cilantro, guacamole, sour cream, olives, etc., if desired.
