Clean the lentils from any small stones or debris and rinse them with plenty of water. Drain and set aside.

Heat the olive oil in a deep pot and sauté the onion for a bit. Add the carrot and celery and stir for 3-4 minutes. Add the garlic, bay leaves, cumin, pepper, and red pepper flakes, stirring to release their aromas.

Next, add the water or broth and the lentils. Lower the heat and cook until the lentils are tender but not mushy. Salt the dish just before turning off the heat and add the lemon juice and a little oregano.

Serve with a drizzle of raw olive oil and extra lemon for those who like their lentils more tangy. Accompany with olives, cured fish, and plenty of freshly baked bread. Enjoy your meal!
