This salsa is perfect for tacos al pastor. It’s not only deliciously spicy, but also has a creamy texture and the sweet-tart flavor of pineapple. It’s so good, I want to try it with other dishes too.

This salsa is perfect for tacos al pastor. It’s not only deliciously spicy, but also has a creamy texture and the sweet-tart flavor of pineapple. It’s so good, I want to try it with other dishes too.

Sauté the chopped onion, garlic, and allspice berry in the sesame oil. If you don’t have sesame oil, use any cooking oil you have on hand.

Once they’re lightly browned, remove them from the pan. In the same pan over low heat, sauté the chiles for just a minute, stirring constantly.

Remove the chiles, then add the pineapple pieces to the pan. There will be just a little oil left, so the pineapple will brown quickly. Add the vinegar at this point.

Transfer everything to a blender, add the salt, and blend until smooth. If you need more liquid, add some pineapple juice or a little water. The salsa should be a fine purée.

Taste and adjust the salt if needed. Your creamy, spicy salsa is ready!
