Ingredients

Serves 4 servings
  1. 3 1/3 lbschicken drumsticks and thighs (about 1.5 kg)
  2. 2 cupstomato purée (about 500 grams)
  3. 1onion
  4. 1 stalkcelery
  5. 1carrot
  6. 1 clovegarlic
  7. 1 sprigrosemary
  8. 1 bunchparsley
  9. 1 sprigsage
  10. Black olives, to taste
  11. 1/4 cupdry white wine (about 60 ml)
  12. Salt, pepper, and extra-virgin olive oil, to taste

    Wash and clean the vegetables. Finely chop the celery, carrot, and onion.

  2. 2

    In a large pot, heat a drizzle of extra-virgin olive oil and add the chopped vegetables. Sauté over low heat.

  3. 3

    Meanwhile, prepare the chicken by trimming any excess fat, then add it to the pot.

  4. 4

    Finely chop the garlic, parsley, and rosemary, and add them to the chicken.

  5. 5

    Brown the chicken on both sides, then pour in the white wine to deglaze.

  6. 6

    Add the tomato purée, olives, salt, and pepper. Cover with a lid and cook over medium heat for about 45 minutes.

  7. 7

    Stir occasionally. When done, serve the chicken cacciatore hot!
