Wash and clean the vegetables. Finely chop the celery, carrot, and onion.

In a large pot, heat a drizzle of extra-virgin olive oil and add the chopped vegetables. Sauté over low heat.

Meanwhile, prepare the chicken by trimming any excess fat, then add it to the pot.

Finely chop the garlic, parsley, and rosemary, and add them to the chicken.

Brown the chicken on both sides, then pour in the white wine to deglaze.

Add the tomato purée, olives, salt, and pepper. Cover with a lid and cook over medium heat for about 45 minutes.

Stir occasionally. When done, serve the chicken cacciatore hot!
