Note 2: Mushrooms contain a lot of water—if you add too many, the omelette may not turn out crispy.

Today I used whatever vegetables I had at home.

Steps

Mix the almond flour, vital wheat gluten, 1 egg, and water together until smooth.

Add the mussels and stir to combine. Heat about 4 tablespoons olive oil (about 60 ml) in a skillet. Once hot, pour in the mussel mixture and fry until golden and crispy on both sides.

Cut the omelette into bite-sized pieces with a spatula and push them to the side of the pan. Crack the remaining egg into the pan and lightly scramble it. Toss the fried mussel pieces with the egg so they are coated.

Add napa cabbage, enoki mushrooms, and fish sauce. Stir to combine and continue frying until crispy. Sprinkle with green onions. Serve with chili sauce.
