Ingredients

  1. 1large handful coriander, including stalks chopped finely,
  2. 2egg yolks,
  3. 5 tbspchilli infused oil, (or use a neutral oil instead),
  4. 1 tbspwalnut oil,
  5. 2 tbsplemon juice,
  6. 2 tbspwater,
  7. 1 pinchsalt
  8. Equipment needed:
  9. 1blender

Cooking Instructions

20 mins
  1. 1

    Blend the coriander and water together until a grainy paste is formed.

  2. 2

    Add in the egg yolks and blend for another minute. Add in the lemon juice and pinch of salt, blend for a few more seconds.

  3. 3

    Now add in the oil 1tbsp at a time blend, add another tbsp, blend and so on until the emulsion froths up and thickens slightly.

  4. 4

    Decant into a clean jar or bottle and refrigerate. Use as a salad dressing or to drizzle over dishes.
