Cooking Instructions

Blend the coriander and water together until a grainy paste is formed.

Add in the egg yolks and blend for another minute. Add in the lemon juice and pinch of salt, blend for a few more seconds.

Now add in the oil 1tbsp at a time blend, add another tbsp, blend and so on until the emulsion froths up and thickens slightly.

Decant into a clean jar or bottle and refrigerate. Use as a salad dressing or to drizzle over dishes.

Bring equal size mint marinaded lambchops and eggplant rounds to room temperature coated in mixture of olive oil, lemon juice, chopped mint leaves, garlic, pepper and salt. Pan sear lamb chops and eggplant in olive oil. Make salad dressing from pan drippings, leftover mint marinade and white wine. Drizzle over salad.
