It is a very popular Vegetarian dish here in Hyderabad and is cooked with a few spices as well as lots of Onions. Hence it is named as Meethe (sweet) because it is not very spicy and a bit on the slightly sweeter side because of the Onions. That's why the dish is termed as Meethe Baingan and is made with both Green and the regular one's available in the markets. This one is made with Green one's, so it is named as Harey (Green)
It is a very easy one to make on any day for the important meals. It tastes equally yum with both Rice and Rotis or Phulkas. It does not even require a Gravy alongside. It is best enjoyed on it's own. A few Poppadoms or Papad is enough.

Ingredients

25-30 minutes
4 servings
  • 1/2 kgGreen Brinjals
  • 4Onions finely chopped
  • 1 tspGinger garlic paste
  • 1/2 tspTurmeric powder
  • 1 tspKashmiri Red Chilli powder
  • 1 tspCumin powder
  • 1 tspCoriander powder
  • 1 tspSalt or to taste
  • 2-3 tbspOil
  • 1small bunch Coriander Leaves chopped

Steps

25-30 minutes
  1. 1

    Wash and cut the Brinjals into small cubes. Keep these immersed in salted water until ready to use.

  2. 2

    In a pan, heat Oil and saute the Onions. Add all the spices one by one followed by the Brinjals. Cover and simmer after adding just about 1 cup of water on a low heat. It is ready in about 18-20 minutes. In between, check it at regular intervals. They should be tender and soft with most of the water dried. That's the right time to take it off the heat. It's a dry Sabzi. So saute it well. But take care not to over do it. It should have a nice thick Gravy due to the presence of Onions.

    Adjust Salt according to taste. Garnish with chopped Coriander Leaves and serve hot.
