A tangy chutney that goes well with Rice, Rotis and even Parathas. It also makes for a yummy spread on Sandwiches, Wraps and Rolls too. It's absolutely easy to make and also a multipurpose one at that. It can be put to a variety of uses. And the best part is that it can be stored for almost 4-5 days in the refrigerator or even more if stored in the freezer. But it's best if made fresh and used within 5 days. There is one more thing to note down about this is that if the amount Tamarind is increased, it can stay good for about 10 days in the refrigerator. Keep it stored in a glass dish. And use a clean spoon each time. With these simple precautions, you will end up enjoying a lovely Chutney in your mealtimes.

Ingredients

15-20 minutes
5-6 servings
  • 1 bunchSpring Onion
  • 2Red Onions finely chopped
  • 2-3Garlic Cloves
  • 1 tspSalt or to taste
  • 1 tbspOil
  • 1 tbspCoriander Seeds
  • 2-3Green Chillies roughly chopped
  • 2-3 tbspTamarind pieces
  • FOR THE TEMPERING -
  • 2-3 tbspOil
  • 2-3Dry Red Chillies
  • 1 SprigCurry Leaves
  • 1 tspCumin Seeds
  • 1/8 tspAsafoetida or Hing

Steps

15-20 minutes
  1. 1

    Heat a tablespoon of Oil l and saute the Coriander Seeds as well as the Garlic Cloves. After sauteeing for a while, add both the Onions finely chopped to the pan. Also add the Green Chillies.

    After 2 minutes, add the Tamarind. Cook until soft and mushy. After almost 5 minutes, take it off the heat and let it cool. Blend all into a smooth paste using as little water as possible only if required.

    Temper the Chutney and serve hot with steaming plate of Rice and Fish Fry just like I did. It tastes heavenly.
