Ingredients

1 tbspoil
2Chopped Shallots
175 mlport
175 mlred wine
1 sprigrosemary
1bay leaf
759 mlgood beef stock
2 tbspbutter
to tastesalt

Steps

1

Pan fry shallots in oil - Caramelise
2

Add port, wine and herbs, simmer and reduce by half
3

Add stock and reduce by half again, to a consistency that will coat a spoon
4

Strain through sieve and bring back to boil
5

Remove from heat and add butter
6

Season to taste
