Ingredients

  • 1 tbspoil
  • 2Chopped Shallots
  • 175 mlport
  • 175 mlred wine
  • 1 sprigrosemary
  • 1bay leaf
  • 759 mlgood beef stock
  • 2 tbspbutter
  • to tastesalt

Steps

  1. 1

    Pan fry shallots in oil - Caramelise

  2. 2

    Add port, wine and herbs, simmer and reduce by half

  3. 3

    Add stock and reduce by half again, to a consistency that will coat a spoon

  4. 4

    Strain through sieve and bring back to boil

  5. 5

    Remove from heat and add butter

  6. 6

    Season to taste
