I usually use whatever vegetables I have in fridge so can add leeks, onions , spinach as well. Any combination works !!!

I usually use whatever vegetables I have in fridge so can add leeks, onions , spinach as well. Any combination works !!!
Steps

Dice into similar sized pieces the mushrooms, courgettes and red pepper and chilli

Fry in olive oil till translucent approx 7-8 min
- 3
Prepare couscous ie add a cup boiling water with a bit of stock to one cup couscous and leave to absorb for a few minutes till fluffy

Put cooked veggies into couscous and mix together

Add in cubed feta cheese and chopped sun dried tomatoes and sprinkle with the dhania
- 6
Serve with cooked tuna, chicken or chops and a small salad to round off the meal
