Fresh lotus seeds are in season, but longan isn’t yet, so I used dried longan for this recipe.

Fresh lotus seeds are in season, but longan isn’t yet, so I used dried longan for this recipe.

Soak the dried longan in water for at least 30 minutes until soft and plump.

Add water and lotus seeds to a pot and bring to a boil. I use fresh lotus seeds from Hue, so they become tender quickly. Simmer on low heat and skim off any foam. Add sugar and bring back to a boil. Taste and adjust with more hot water or sugar if needed.

Add the soaked longan and bring to a boil again. Dissolve the tapioca starch in a little cold water, then pour it in and stir well. Finally, add the vanilla, turn off the heat, and ladle into bowls. This lotus seed and longan sweet soup is best served cold!
