I wanted to make a recipe that uses tablespoon of ingredients because I never really feel like carefully measuring out teaspoons of ingredients early in the morning.

I measure out my ingredients in tablespoons as much as possible.

If you want the eggs to be a little sweeter, add 1 tablespoon mirin instead of sake.

Don't overcook the eggs until they become dry and crumbly.
Make the eggs a little firmer than you would make scrambled eggs.
Once half of the egg mixture is cooked through, the rest of the egg mixture will cook in residual heat. Recipe by Shijimi24

Ingredients

2 servings
  1. 2Eggs
  2. 1 tbspeach Sugar, sake
  3. 1 bagCocktail sausages
  4. 1Broccoli (boiled, optional)

Cooking Instructions

    Stir-fry the sausages in oil. If you are using broccoli, add it at this stage. Pour in half of the beaten eggs (mixed with sugar and sake in advance) and when the edges are cooked, stir lightly.

    Pour in the rest of the beaten egg mixture and stir lightly again. Don't cook the eggs until they become dry and crumbly as it'll continue cooking in residual heat. Stop cooking while the eggs are still a little wet!

    Serve with soy sauce or ketchup. They also go well with bread or rice. You could also try sandwiching them between 2 slices of toast with a dollop of ketchup!

    Broccoli and sweet eggs make a great combination. Stir-fry the broccoli together with the sausages.

    Since the eggs will stick to the broccoli and cocktail sausages, they won't be dry and crumbly. So they are easy to eat.
