Cheesy French Toast with Koya Tofu (Low-Carb)

I felt like eating some sweet and salty french toast, and when I made it with grated cheese, it was a huge success (a low sugar recipe).

You could re-hydrate the tofu and the egg mixture would soak through to the center easily, but leaving them dried creates a better texture.

Cook on very low heat and don't move them around the pan until browned and crisp.
You will be amazed at how chewy these turn out. Recipe by Asabi

Ingredients

2 servings
  • 2blocks Koya tofu
  • 1★Egg
  • 100 ml★Soy milk or milk
  • 1 tbsp★Artificial sweetener (or sugar or other sweetener)
  • 1 dash★Rum or vanilla essence
  • 1 sliceButter for cooking
  • 1 dashGrated cheese or salt
  • 1optional Whipped cream, etc.

Steps

  1. 1

    Poke holes into the koya tofu before reconstituting. Make sure you poke the holes deep so that the egg mixture can penetrate through.

  2. 2

    Combine all of the ★ ingredients together. Cover the tofu with the mixture and let sit for at least 30 minutes. This is how it looks after soaking in the mixture overnight.

    Melt the butter in the frying pan. Cook one side on very low heat.

    Once browned and crisp, flip over and cook the other side. Sprinkle with grated cheese or salt for a delicious sweet and salty finish!!

  5. 5

    If the koya tofu is quite large and there isn't enough egg mixture, adjust the amount with soy milk.
