Ingredients

  2. 1/4 cup(about 40 grams) erythritol or xylitol, stevia, or similar
  3. 1 splashvanilla extract
  4. 1 cup(about 100 grams) almond flour
  5. 1 teaspoon(about 5 grams) aluminum-free baking powder, preferably
  6. 1/2 teaspoon(about 2 grams) xanthan gum
  7. 1 1/2 tablespoons(about 20 ml) coconut oil
  8. 1/4 cup(about 60 grams) low-carb Greek yogurt
  9. Decoration
  10. Powdered erythritol, to taste, like powdered sugar

    This recipe is quick, so start by preheating the oven to 350°F (180°C). Grease the mold with oil or butter; I used a napkin to spread it evenly with just a little.

    Beat the eggs, erythritol, and vanilla for a long time until they change color and become frothy.

    Add the yogurt and oil, and beat a little.

    Add the rest of the ingredients: almond flour, baking powder, and xanthan gum, previously mixed together. Beat, but not too much. The mixture will be somewhat thick.

    Pour and arrange in the mold; it makes 6 pieces. Bake for 10 - 12 minutes, checking doneness by inserting a wooden toothpick.
