Cucumber, Leek, and Fried Tofu Seasoned with Wasabi

Topping toasted aburaage with leeks and soy sauce is common, but I added cucumbers and wasabi.
Soaking the leeks in soy sauce at the beginning makes the leeks melt. You can substitute the leeks for myoga ginger. But if you use both, the flavor becomes diluted, so just pick one.
The wasabi isn't as spicy as you think, so feel free increase the amount. Recipe by Eru912

Cooking Instructions

Put the soy sauce in a bowl. Cut the leek in half vertically and then cut diagonally in thin slices and let soak in the soy sauce.

Lightly brown the aburaage in the toaster oven (after browning, use a paper towel to drain the oil).

Cut the aburaage in half vertically and then cut into thin strips. Cut the cucumber in half vertically as well, and slice diagonally.

Dissolve the wasabi in a tablespoon of sake and then add to Step 1. Add Steps 2 and 3, and then it's done.
