First, boil the potatoes in a pressure cooker, peel them, cool them and grate them. So that no lumps remain in the potatoes.

Now add gram flour (besan) and rice flour to the potato paste, Then add red chilly powder, salt, turmeric powder, chaat masala, amchoor powder, garam masala, asafoetida and oil and mix well.

Now add black pepper powder in this mixture and mix it and make dough without using water. Now apply oil on the hands and knead the dough well.

Now heat the oil in a pan. Then grease the mould with oil from inside and also grease the net of the mould with oil and fill the dough inside. Now that the oil is hot, keep the gas flame slow to medium and add sev it around the circle. As soon as the bubble settles in the oil, then turn it over to the other side and fry crispy on both sides.

Now our very crispy and spicy aloo bhujia is ready to serve. You can serve this Bhujiya in tea time. This Bhujiya can be stored in an air tight container for 15 days.
