Wash well & soak both the measured quantity of Dals overnight or at least for 6 hrs time until they puff up nicely-
Post that, strain well & blend it nicely absolutely smooth and pliable without any water at all (or just a tbsp of water can be used if you’re finding it difficult to blend properly)-
The batter/mixture should be absolutely thick - 2
The consistency of the very batter should be like this as is seen in the pics itself 👇🏻
Now, add into it some salt & sugar and whip it up nicely either with your hands or spoon or hand mixer-
I usually prefer it with my hands to actually fathom the correct fluffiness of the batter-
Whip until absolutely fluffy well aerated & increased in its quantity due to that (this procedure ensures the softness & fluffiness finally, once they’re ready) - 3
I actually, have made a tweak in this very recipe that I usually don’t do but ultimately doing so- The final outcome in terms of its taste & looks turned out to be absolutely gorgeous and tempting…
I’ve used some blanched Basale Leaves in this- In order to enhance its tastes not knowing in actuality how it’d be once prepared - 4
Trust me, it tasted perfectly incredible- Of course, that’s my own perception, however this is completely optional hence, didn’t mention it in my ingredients lists…

Now, once the batter is ready: Add in the rest all other ingredients except the garnish ones & the baking soda-
Again, whisk it well together until nicely combined and well blended-
Post that, divide the entire batter into 2 equal portions, cover the one while working on with the other-
In the first bowl now, mix the baking soda and it need be cooked immediately - 8
Heat up a frying pan over the medium flame: Add in the cooking oil and pour in the entire mixture from the first batch of this batter-
Reduce the flame to the medium-low now & maintain that while, frying the Moonglets-
Cover it up & allow it to slow cook for about 3-4 mins time each side & then, flip it over to the other side & covering it back again, cook for another 2-3 mins time - 9
Now, once both the sides are well cooked then, make a cross like incision halfway through & not in its entire body at its one side & add in some dollops of butter (which’s a must have in all the street foods in our country, specially)-
Flip it over again and fry it for another one minute or so & then, transfer it to a separate plate/dish directly - 10

It’s now absolutely ready to be grabbed in time…
