Zafrani pulav is the famous vegetarian Awadhi fragrant rice, a mildly sweet delicacy prepared with nuts and saffron.
Steps

Wash basmati rice, drain and keep aside.

Heat ghee in a large heavy pan or pressure cooker.

Add whole spices, allow it to splutter.
- 4
Add half of the chopped cashews, almonds, raisins, coconut and fry for a minute.

Add rice, stir gently for half a minute.

Add water, cover and cook till the rice is half done.

Boil milk in a pan and add sugar.
- 8
Add saffron, rose water and kewda.
- 9
Add this milk in semi cooked rice, mix well and cook till the rice is properly cooked.

Fry remaining nuts in ghee.
- 11
Garnish fried nuts over pulav and serve.
