In a bowl mix 1 cup warm milk, 2 tsp sugar and 7 gm yeast and keep for 10 mints.

Now sieve 3 cup maida, ½ tsp salt.
Start kneeding using your hands.
It will be very sticky, but that's ok.
Knead for 10 mints.
If required can add ¼ cup or 1 tbsp warm milk, depends on the texture, climate and flour. - 3
Apply 2 tsp room temperature butter.
Make soft dough, tuck dough keep in bowl.
Now cover with cling wrap and leave in warm place for 1 hour.
In a hour it will raise double of it's size.
Punch the raised dough softly. - 4
Now Knead again for 5 mints.
Tuck the dough and cut into equal size balls. (From this you can make 8 normal market size pav, I've made mini so mine is 16) - 5
Apply butter grease baking tray.
Tuck the dough make round balls, slightly flatten them.
Place it in the tray, and brush warm milk on the top. - 6
Cover with cling wrap and keep for 20 more mints, it will again double it's size.
Now bake in pre-heated cooker for 20 mints on low-medium flame.
Now remove and apply some butter and cover with damp cloth and leave for 10 mints.
