
Japanese Hambagu Steak

This is a Japanese meatloaf in the form of a hamburger patty. This recipe is easy inspired by Western cultures. It’s pretty popular home dinner among Japanese people. I love it.

This is a Japanese meatloaf in the form of a hamburger patty. This recipe is easy inspired by Western cultures. It’s pretty popular home dinner among Japanese people. I love it.

First you need to dice your onion and cook it in a non-stick skillet until onions are browned. Then set aside. Now in a large bowl mix the ground beef and pork together. Add some salt/pepper and mix by hand. Squish it around until all the meat is blended together. Now add 1 egg, panko bread crumbs and the cooked onions and mix well. Should look like the photo below.

Next step is to make round balls with the meat mixture. You want to make them to the size of a tennis ball. Shape the patties by squishing the center and making the ball into a hamburger patty. Make sure you press the center for the patty down with two finger before adding into the non-stick skillet. Repeat process with all the meat mixture until gone. Should look like photo below.

Turn the cooktop or gas stove to medium-high temp and warm up the skillet. Add in olive oil so the patties don't stick. Now place 6 patties or as many as you can fit where there is space between them. You don't want them touching when cooking. Make sure to press down on the centers of all the patties when in the pan. The reason for this is when it cooks it swells up and by pressing the centers the patty holds it shape. Now cook the patties for 4 minutes on each side until done.

Remove the patties from the pan and set aside. It's time to make the demiguise sauce. Add the ketchup, tonkatsu sauces and mix well with the meat juices. Turn the cooktop down to medium-low temp. Now add in the red wine, soy sauce and butter. Mix well until sauce is blended and the wine has reduced. Should look like photo below.

Once the sauce has come to a simmer add back in the hamburger patties one by one coating them in the sauce. Make sure you coat both sides. Turn off the heat cover and set aside. Now it time to get your plates ready. Hambagu is typically served with rice and a salad. Make sure you have rice already cooked and just warm it up and add to your plate. Add the patty to your plate and ladle some of the sauce on top of the patty. Serve with green salad and now it's done. Should look like photo below.
