Cut the chicken thigh into bite-sized pieces. Prepare and slice the other ingredients as needed. Measure out the seasonings.

Heat a pot and add the coconut milk. Simmer until the oil separates. Add the cilantro roots, galangal, lemongrass, some of the shallots, and a few kaffir lime leaves. Add 1/4 teaspoon salt.

Once simmering, add the seasonings to taste. Add the chicken and stir until it is almost cooked through, then add the tomato for sweetness.

When the chicken is cooked, add the remaining kaffir lime leaves and dried chilies. Lower the heat and simmer for 1 minute. Turn off the heat and squeeze in lime juice to your preferred level of tartness.

Serve immediately. If you like it spicier, add more dried chilies or pound some chilies and mix them in.
