Cut the chicken into bite-sized pieces, and put into a plastic bag together with the sake, salt, and pepper. Let sit for 15 minutes.

Make the sweet & sour sauce. Mix the ★ ingredients together in a bowl (it's a syrupy sauce).

Add the listed amounts of katakuriko and cake flour to a slightly large plastic bag and mix. Add the chicken from Step 1 to create a coating.

Place the bag down while spreading it out to keep the chicken pieces from lying on top of one another (this is to keep it from sticking together).

Fry the chicken in oil. Remove from the oil and drain on a paper towel.

Place the hot chicken in the bowl with the sauce. Mix in a bottom-to-top motion to coat the chicken evenly with the sauce.

Transfer to a serving plate with some vegetables on the side, top with white sesame seeds, and it's complete.
