Ingredients

  • 50 grams(about 1.75 oz) red curry paste
  • 4-5whole cloves, toasted and ground
  • 4 teaspoonscoriander seeds
  • 2cardamom pods
  • 5black peppercorns
  • 5large cloves garlic
  • 5shallots
  • 3 teaspoonscumin seeds
  • 1 teaspoonshrimp paste
  • 5whole cloves
  • 1 stickcinnamon
  • 3-4bay leaves (for the curry sauce)

Steps

  1. 1

    Toast all the spices until fragrant. Grind the coriander seeds, cumin seeds, and cloves until fine.

  2. 2

    Toast the shallots and garlic.

  3. 3

    Blend the red curry paste with the ground spice mixture and the toasted shallots and garlic until smooth.
