The stuffing is of Potatoes and Green Peas. These make for an excellent choice at Tea-time. Homemade and fresh, these are crisp and crunchy to the last bite.

Heat oil in a deep frying pan at first. Add a few cumin seeds and asafoetida along with partially crushed coriander seeds. Let them cook on a low heat for a minute or two. Now add onions and saute done.

After onions are nicely done, add the rest of the ingredients or the spices mentioned. Mix well and cook for about 10-12 minutes. That's it. The green peas should be soft and done. Otherwise to speed up the process, you can add them boiled. I prefer adding them fresh and raw so that they blend well with the spices. After it is done, add this to the boiled and mashed potatoes. Mix well and the filling is ready.

Knead a smooth dough out of all the ingredients mentioned and keep it covered for 15-20 minutes. Divide the dough into equal sized balls and make samosas of size that is desirable to you.

Deep fry in hot oil on medium high heat until golden and crisp. Serve them with any chutney of your choice. Enjoy! Yum!
