These were my favourite cookies when I was a kid, packed with nuts and chocolate. I found this free-from friendly version online from the Minimalist Baker and have tweaked it a little to suit whatever ingredients are at home.

Ingredients

Makes 16 large cookies, or 22 small ones
  • 1 TBSPground flaxseed
  • 2.5 TBSPwater
  • 3/4 cupsugar
  • 1/3 cupmelted coconut oil or vegan butter
  • 1/3 cuptahini or peanut butter
  • 1 tspvanilla extract
  • 1 cupalmond flour
  • 3/4 cupgluten free flour
  • 1/2 tspbaking soda
  • 1/2 tspsalt
  • 1/2 cupchopped nuts (I used pecans and cashews)
  • 1/2 cuprolled oats
  • 1/3 cupchopped dark chocolate / chocolate chips (I usually add more like 1/2 cup)
  • 1/4 cupshredded coconut

    Preheat the oven to 176 C (350 F). Line two baking sheets with parchment paper.

    Make flax egg by mixing ground flaxseeds with water, let sit for 5 minutes to set.

    Add melted oil/butter, sugar and vanilla. Add flax egg and mix until smooth.

    Add almond flour, GF flour, baking soda and salt and mix with a wooden spoon or spatula until a dough forms.

    Fold in chopped nuts, oats, chocolate, and coconut until combined. If the mixture is too crumbly, I add another tablespoon or two of peanut butter.

    Form into balls and arrange on the prepared baking sheets, then press them into disks. Bake for 12-15 minutes until golden brown.
