Cooking Instructions

Cut and wash the sweet peppers into halves. Drizzle with olive oil and season with salt & pepper.

Lay on a baking tray with at least an inch apart. Skin side up. Place 1 garlic bulb on the side (not in photo)

Preheat the oven to 200°c, on fan with both heating elements on. Place the tray in the middle, let it bake for 10 minutes. After 10mins, switch to GRILL function on highest temp for 3 minutes. (total 13 mins in the oven)

Carefully take out the tray and let the peppers rest before slicing them to strips.

Meanwhile, make the dressing. Mix the balsamic vinegar, honey, salt and pepper, olive oil, basil, sliced shallots and grilled garlic. Adjust the ratio of ingredients to your taste.

This is optional but I pan fried some eggplant. I didn't grill them together coz they bake longer. Slice to strips.

Plate the peppers and eggplant, pour the dressing. Mix and let it sit for at least 5 to 10mins before serving to let the flavours blend. Enjoy!
