There are few recipes which are specially made during Navratri and this potato peanut sabzi is one of them. It can be served with puris or parathas or you can have it as snack also.
Cooking Instructions

Firstly, peel the potatoes and chop into small cubes.

Heat ghee in a pan on medium heat.
- 3
Add cumin seeds and sesame seeds. Let them crackle.

Add in the green chillies, curry leaves and ginger. Saute for few seconds.

Add chopped potatoes and salt. Mix it well.

Cover the pan and let it cook for 3-5 minutes or till potatoes gets soft. Keep stirring in between.

Now add crushed peanuts. Mix well and cook without covering the pan for 2 minutes or till peanuts turn golden.

Add black pepper powder, lemon juice and sugar. Mix well and cook for 1-2 minutes on low flame.

Add chopped coriander and mix.

Serve with hot rajgira puris or parathas.
