Ingredients

4 servings
  1. 1/2 Cpecans, finely chopped
  2. 1/2 Cdried bread crumbs
  3. 1/4 tspsalt
  4. 1egg3T milk
  5. 2 Tolive oil
  6. 4 (8 oz)chicken breasts, skinless, boneless
  7. 2 Tdark brown sugar, packed
  8. 2 TDijon mustard
  9. 4 tspbourbon
  10. 1 Tsoy sauce, low sodium
  11. 1/2 tspWorcestershire
  12. 1/3 Ccold unsalted butter, cut into small pieces
  13. 1/4 Cgreen onion, sliced for garnish
  14. Toasted pecan pieces, for garnish

Cooking Instructions

    Preheat oven to 350°.

    Stir together the pecans, bread crumbs, and salt in a bowl; spread on a flat pan. Whisk the egg and milk together in a bowl. Dip the chicken into egg mixture, then dredge in the pecan mixture to coat.

    Heat oil in a large skillet over medium heat. Add chicken; cook about 5 minutes until browned on one side. Turn the chicken over and transfer skillet to oven.

    Bake 15 minutes (internal temp 165°).

    Meanwhile, whisk together the brown sugar, Dijon, bourbon, soy sauce and Worcestershire in a small saucepan until smooth. Bring to a simmer over medium-low heat. Remove from heat and whisk in cold butter, 1 piece at a time. (Do not return to heat) Serve sauce over chicken and garnish with green onions and pecan pieces.
