Easy Fluffy Corn and Mayonnaise Bread

My friend told me about rising the dough in the microwave. So, I tried making the dough with yogurt and leftover whey, and it turned out to be really fluffy! Not sour at all. I've been making so many variations with different fillings.

Use either bread or cake flour. If the dough is soft, please dust with extra flour.
It will rise a lot during baking, so the filling will stick out. Use a fork to make lots of holes in the pastry. Please adjust the amount of salt and sugar because it's only mildly seasoned. I recommend you microwave it for 10 seconds if it has gotten cold. Recipe by mini

Ingredients

4 servings
  • 60to 70 ml Yogurt (or whey or milk)
  • 10 gramsMargarine (or butter)
  • 1 tbspSugar
  • 1/3 tspSalt
  • 1 tspDry yeast
  • 100 gramsBread flour (or cake flour)
  • 3 tbsp*Corn kernels
  • 2 tbsp*Mayonnaise
  • 1*Cheese and dried parsley

Steps

    Combine yogurt, margarine, sugar, and salt. Microwave for 30 seconds at 500 W and mix. Stir in the yeast to soak.

    Into the bowl of powdered ingredients, sprinkle in the water evenly. Use a spatula to mix in with a cutting motion.

    When the dough comes together, microwave either at 200W, the "low" setting or the "defrost" setting for 30 seconds. Set aside in a warm place for 15 minutes.

    Dust the dough and press down to punch out the air. Divide into four portions and shape. Make a indent and top with a mixture of corn kernels and mayonnaise. Cover with plastic wrap and microwave for 30 seconds at 200 W.

    Cover with a damp cloth. Use the "dough rising" setting of your oven (or cover with plastic wrap and let rest at about 35 - 40℃ ). Let rest for 15 minutes until the dough doubles in size.

    An example of how to adjust the temperature: During the wintertime, I usually fill a mug with water and microwave for 2 minutes. Then I put the dough in the warmed microwave to rest with the mug of hot water.

    Preheat the oven to 180℃. Bake for 14 to 18 minutes. It's done when it's nicely browned.
