Gluten-Free Beef Udon

Beef udon is a Japanese comfort dish made with stir-fried beef, dashi soup stock, and various toppings. The traditional recipe uses regular udon, which is not gluten-free. In this post, I will share with you the gluten-free beef udon recipe.
The udon I use in this recipe is homemade. Gluten-free udon can also be found at some Asian supermarkets, too, but they're harder to come by.
The beef I use is rib but any other good cut of beef will work. I bought this beef already thinly sliced from Ranch99 but many Asian groceries also offer this convenient option. If you choose your own beef, the easiest way to make that paper-thin beef is to half freeze it then slice it. You can also slice it using a meat slicer.
Tenkasu or small bits of tempura batter is optional but it really enhances the flavor and texture of this dish.

Cooking Instructions
- 1
Chop the green onion. Thinly slice the yellow onion. Grate the ginger.
- 2
Cut a few thin slices of carrot.
- 3
Marinate the beef with 1 tbsp of gluten-free soy sauce, 1 tbsp of mirin, 1 tsp of grated ginger, and 1/2 tsp of sugar. Mix everything together and let the beef marinate for 20 minutes. You can also do this before you prepare the condiments and the soup stock to save time.
- 4
Boil or reheat the gluten-free udon noodles.
- 5
Blanch the carrot for 20 seconds.
- 6
Prepare the udon soup stock by heating 4 cups of dashi with 2 tbsp of gluten-free soy sauce, 2 tbsp of mirin, 1 tsp of sugar. Bring the pot to a boil. Since the beef already is marinated and flavorful, the soup stock doesn’t need to be salty. Once the soup is bubbling, lower the heat enough to keep the soup stock hot while we stir fry the beef.
- 7
In a pan, heat up 1 tbsp of oil and saute the sliced yellow onion until fragrant. Next, add the marinated beef and continue to stir fry until the beef is well done. Turn off the heat when the beef is fully cooked.
- 8
To serve, add a few ladles of soup stock into a bowl with the udon noodles. Next, place some stir-fried beef into the bowl. Add a few pieces of blanched carrot. Top off with some green onion and tenkasu if you decide to use it.

I wanted to eat chilled noodles and also wanted to use up some beef left over from making sukiyaki the night before.Make sure you chill the udon and mentsuyu well. I don't usually measure out the seasonings for the beef, so adjust the amounts to your liking.I use a type of mentsuyu called hontsuyu. For the sauce, I mix it with water at a ratio of 1:1. It can be hard to find thick and chewy gluten free udon noodles that have a texture just like the regular ones. After many trials and errors, I have found the perfect recipe to make gluten free udon noodles at home with just rice flour and tapioca flour.Making noodles at home sounds like a difficult task but I promise it's easier than it seems. Although freshly made noodles are still the best, they also won’t lose their texture after storing in the refrigerator for a few days. Julie - Mrs. Lin's Kitchen -

The udon I ate at a restaurant was so delicious that I wanted to try recreating it.For the dashi, you can use iriko dashi or iriko and konbu. The pork is well-seasoned, so it's best if the dashi is a seasoned lightly. Also, pork that is high in fat is more flavorful, but use what you prefer. Recipe by Ojoman cookpad.japan -
