Ingredients

  1. 1egg
  2. 1small tomato chopped
  3. Small amount red onion chopped
  4. Handfulbaby spinach leaves chopped
  5. Spring onion chopped
  6. Butter/olive oil
  7. Smoked salmon off cuts -50g or so

Cooking Instructions

    Chop all vegetables and salmon. Add knob of butter and / or tablespoon olive oil to frying pan

  2. 2

    Start lightly frying onion and then add tomato

  3. 3

    Add in chopped spinach and fry till wilted

  4. 4

    Add salmon and spring onion and fry a minute or two more

  5. 5

    Add the beaten egg and stir till cooked

  6. 6

    Season and serve with avocado. Delicious 👍
