  • Broth:
  • 20 gramskombu
  • 10 gramsbonito flakes
  • 1 tablespoonsugar
  • 1 tablespoonsoy sauce
  • 2 tablespoonsmirin
  • Salt to taste
  • Toppings:
  • Fish cakes
  • Mushrooms
  • Chikuwa
  • Tofu
  • Napa cabbage
  • Hot dogs
  • Fish balls
  • Fish tofu

  1. 1

    Ingredients needed

    A picture of step 1 of Oden (Broth Preparation).
  2. 2

    1. Soak the kombu in water for 4 hours.
    2. In about 8 1/2 cups (2000 ml) of boiling water, add the kombu and its soaking water, along with the bonito flakes. Boil for 10 minutes.

    Remove the bonito flakes (or leave them for texture), adjust the broth color with soy sauce (to a yellow-brown), add mirin and sugar for flavor, and finally adjust the salt to taste. Cook the toppings in the broth until done.
