Steps

First for making chena, give a full boil to milk and then gradually add vinegar / lemon juice. After few minutes milk will curdle and water will turn greenish.

Now we need to separate chena from greenish water with the help of a strainer, after 1 hour chena is ready for further process.

In a pan add milk give a rolling boil and simmer for 5 - 6 minutes under medium flame by adding cardamom.

Assemble all ingredients

After few minutes milk will reduce to some extent.

Now add chena crumbles and cook for 7-8 minutes till milk reduces and thickens

Now add dry fruits, sugar, mix well and simmer for few more minutes.

Lastly add ghee, mix nicely and simmer for 1 -2 minutes, if it turns too thick then add warm milk as per requirement.

Now payesh / kheer is ready, let it cool down completely and refrigerate for 3-4 hours if preferred chilled. Garnish with little dry fruits and it is ready to serve.
