Ingredients

4-6 servings
  1. 4 lbs beef brisket or beef chuck roast will also work
  2. 2 Tbsp avocado oil
  3. 3 - 4 chipotle chilis in adobo
  4. 1 1/4 cups beef broth
  5. 4 teaspoons minced garlic (I use 10-12 cloves)
  6. 1 1/2 Tbsp ground cumin
  7. 1 Tbsp dried oregano
  8. 1 Tbsp1 Tbsp salt then more to taste
  9. 1 Tbsp1 Tbsp ground black pepper
  10. 1 Tbsp1 Tbsp fresh lime juice

Cooking Instructions

    Cut the beef into large cubes. In a large skillet over medium high heat add the avocado oil and sear the beef on each side and for the burnt end flavors.

    Transfer to your slow cooker.

    In a food processor add adobo chilis, beef broth, garlic, cumin, oregano, salt, pepper, and lime juice. Pulse until blended and pour on top of the meat.

    Cook on low for 8-9 hours or high for 6 hours. Shred the meat with two forks and turn on warm.

    Serve with your favorite taco mixings on a tortilla or over rice.
