Heat oil in a heavy cast iron pot to 375 F

Toss the sliced onion rings with 1 teaspoon paprika

In a separate bowl, mix the flour and remaining paprika together. Add ~8 ounces beer and mix. Add more beer if the batter is too thick. It should resemble pancake batter thickness

Submerge the onion rings in the batter and coat completely. Using a fork or tongs, place in the hot oil. Fry until golden brown

Drain on paper towels and salt to taste

Serve immediately or keep warm in an oven at 180 F
