Back to school with a bang, thanks to Raffaela and her first Cookpad video lesson dedicated to lasagna! It's so satisfying to make homemade pasta, and when it turns out well, the excitement is through the roof. For a more rustic pasta sheet, I replaced a small part of the all-purpose flour with semolina flour, and I added mozzarella to the filling.

Ingredients

  • For the pasta sheets
  • 2eggs
  • 1 1/3 cupsall-purpose flour (about 150 grams)
  • 1/3 cupsemolina flour (about 50 grams)
  • For the meat sauce
  • 2 cupstomato purée (about 500 grams)
  • 14 ozmixed ground meat (about 400 grams)
  • 1carrot
  • 1onion
  • 1celery stalk
  • 1/4 cupdry white or red wine
  • Olive oil, salt, and pepper to taste
  • For the filling
  • 1 1/4 cupslow-moisture mozzarella cheese, diced (about 150 grams)
  • 1/2 cupgrated Parmesan cheese (about 50 grams)
  • For the béchamel sauce
  • 3 1/2 tablespoonsbutter (about 50 grams)
  • 1/3 cupall-purpose flour (about 50 grams)
  • 2 cupswhole or 2% milk (about 500 ml)
  • Salt and nutmeg to taste

    Start by making the meat sauce: Wash and dry the vegetables, finely chop them, and sauté in a pan with 2 tablespoons of hot olive oil.

    Add the ground meat and cook over medium heat. When the meat has browned, pour in the wine. Once the alcohol has evaporated, add the tomato purée, salt, pepper, and a teaspoon of sugar. Lower the heat, cover, and simmer on low for at least 1 1/2 to 2 hours.

    Once cooked, let the sauce cool and thicken with the lid slightly ajar to prevent the lasagna from getting soggy.

    Next, prepare the egg pasta: In a bowl, mix the two flours and make a well in the center. Crack the eggs into a separate bowl, beat them, and pour them into the well. Start mixing. If the dough needs more moisture, wet your fingertips and continue kneading.

    Transfer the dough to a floured surface and knead until you have a smooth, even ball.

    Wrap the dough in plastic wrap and refrigerate for at least 30 to 45 minutes.

    Now make the béchamel sauce: Melt the butter in a small saucepan over low heat. Once melted, remove from heat, add the flour, and whisk to combine and form a roux.

    Return to the heat and cook for a few minutes, then gradually add the warm milk, whisking constantly. Add salt, pepper, and nutmeg, and keep whisking until it comes to a boil. Turn off the heat as soon as it starts to thicken.

    Pour the béchamel into a dish and let it cool so it thickens and sets.

    Take the dough from the fridge, cut off a piece, and start rolling it out with a pasta machine. Dust your work surface with a little semolina flour, pass the dough through the machine set to the widest setting.

    Pass the dough through the pasta roller several times, folding it into thirds each time to make it even and remove excess moisture.

    Once you have a smooth, elastic sheet that isn't sticky, continue rolling it thinner by narrowing the rollers until you reach a thickness of about 0.05 to 1 mm.

    When the pasta sheet is at the desired thickness, cut it to fit your baking dish and let the lasagna noodles rest for 10 minutes on the work surface or a clean kitchen towel.

    It's time to assemble the lasagna: Gather all your prepared ingredients and cut the mozzarella into small pieces.

    Spread a layer of béchamel and a little meat sauce in your baking dish to prevent sticking, then add the first layer of pasta. Continue layering with béchamel, meat sauce, Parmesan, and mozzarella, then cover with another layer of pasta. Repeat until all ingredients are used.

    Finish with a final layer of sauce and plenty of Parmesan. Make sure to cover the corners with sauce so they don't dry out during baking.

    Preheat the oven to 375°F (190°C) with convection if possible. Cover the dish with aluminum foil and bake for 30 minutes, then remove the foil and bake for another 10 minutes.

    When done, remove from the oven and let rest for 15 to 20 minutes so the lasagna sets and is easier to cut and serve.
